Quorn Chilli

20170630_151928After a few threats from Jane that she was going to make a quorn chilli for me, I decided that I would make some first. I cant quite recall everything I used to make it, so I may have to come back and edit this later

Ingredients: Large onion, garlic, red kidney bean in chilli sauce, tin of tomatoes, Quorn mince, cumin, coriander, chilli powder, smoked paprika, veg stock cube, tomato puree, salt and pepper

 

Preparation: chop the garlic and onion and fry until they start to brown. Add the Quorn mince ( half of the normal 350g pack) and then add the kidney beans , tomatoes and tomato puree. Add the spices and the veg stock cube and bring to heat then simmer for around 20 minutes. This will allow the times for the flavours to combine and the kidney beans to soften further.

Taste and add salt and pepper where needed. Finally add some fresh coriander to the mix

Optional – You can make this anyway you like, such as using some green peppers and chilli peppers to bring more heat and veg to the mixture.

This dish was served with Tacos, cheese and green salad
